3 peppers 1red. 1 orange 1 yellow
1 pound ground turkey
1 large sweet onion
1 15 ounce can seasoned diced tomatoes
1 cup cooked brown rice
1/2 cup panko bread crumbs
1/2 cup grated Parmesan cheese
1Tbs of fresh ground fennel or (1/2 Tbsp each of basil and oregano) optional
salt and pepper to taste


Brown turkey and onion in a saucepan
Add diced tomatoes and simmer for 5 minutes (may add seasonings as desired) I use basil and oregano about 1/2 teaspoon each) in a bowl combine rice, bread crumbs and parm cheese and pour over cooked mixture to combine.
Fill each pepper half (peppers have been parboiled-for 10 minutes) with one 6th of the mixture may sprinkle a small amount of additional Parmesan cheese over peppers
Place in a shallow baking pan uncovered bake in a 350 degree oven for 45 minutes
